Talking about toasts with Goldilocks we ended up misunderstanding each other for minutes, until I suddendly said, “for Godnesss shake, what’s a toast for you?“.
Well it ended up that what for an american is a toast, for an italian is just toasted bread. And what for an italian is a toast, for an american is.. a sort of sandwitch with toasted bread.
Actually, in Italy, when someone ask for a toast, he espects a very specific meal, warm, crunchy outside and creamy and with ham inside. Eventually you can fill it with other ingredients, but the base in italy is just cheese (cheese slices) and prosciutto cotto.
I’m proposing you a variation from the standard recipe, by replacing cheese slices with a much healthier fior di latte (cow milk mozzarella) or fontina (fat cheese from italy, it melts like a slice, but it’s not). The main idea is to use things we know, with fewer preservatives and food colorings possible. And if you check sliced cheese ingredients.. oh well.
Ingredients: for one Tostone. Or Big Toast.
- Two slice of bread (i love those for bruschetta)
- 2-3 Slices of high quality ham depending on size.
- Mozzarella or fontina.
- [Optional] some slices of salad.
- [Optional] Salty butter.
Cut the bruschetta bread (1) in half (2) and if you want, butter the inner sides with salty butter (3). While butter is not necessary at all for a toast, it’s a great addition for a morning meal. I usually buy salty butter in small portions (0.5 oz) like those you can find in hotels. They’re perfect to put the right quantity.
Grate the fontina cheese (4) or slice mozzarella very very thin. This allows the cheese to melt faster without the risk of bruning your bread too much.
Place the cheese on the buttered side of the bread (5), and then cover it with two or three slices of good ham (6) (i use prosciutto cotto for that). Use high quality ham, possibly with thoose small white parts of fat. Resist to the tempation of removing them. They’ll make the toast much better. Be sure the ham doesn’t go out the bread too much, and close it with the other half, buttered side inside (7).
Cook for 5-8 minutes, until the cheese melts and the bread toasts. I don’t like it too burned, so i just make it a little golden.
Then eventually open the toast again (from the ham side) and add some fresh salad. While it’s not necessary, it could be a nice fresh addition. Be sure to cook it another minute after putting salad.
Cut in two halves and if you like mayonnaise, serve with some mayonnaise mixed with some tabasco(7-8). People are supposed to dip the toast in some mayonnaise if they want to. I’m not a real fan, expecially if the ingredients are good quality. I’d rather taste the filling than mayonnaise, but that’s how they serve it nowadays.
Place the two pices of toast in a dish, with the mayo aside.
Done. Simple. Easy. Great. A good way to start your day. Or to cook a simple quick meal.
